Outdoor Catering

For the past two months the Certificate III in Guiding students have been focusing on the unit:  Provide Outdoor Catering, which describes the performance outcomes, skills and knowledge required to provide catering for tour participants in an outdoor environment.  The students have been learning to plan menus, cooking on MSR stoves and ensuring that their food is stored, prepared and served in a safe and hygienic manner.

Our first session was held at Taroona Beach in March and last week, the students battled with the wind at Waterworks Reserve to cook up a two-course meal.  After they had enjoyed their food, they also spent time learning about the flora and birdlife in each area.
